When you grow tired of the same old salads, you might want to perk up your taste buds with an unusual and flavourful one. The Asian touch is lent by the curry powder or Indian curry paste you blend in it. Enjoy this dish once in a while with your family and leave them asking for more. Serve it as an accompaniment for lunch or dinner to satiate the cravings.
Barbequed chicken – 1 large (no stuffing)
Ripe mango – 1 (cubed)
Seedless grapes (red or green) – 1 cup
Green onions – 5 (finely chopped)
Celery – 3 sticks – sliced thin
Light egg mayonnaise – 1 ½ cups
Sliced potatoes – 750 gms (peeled & drained)
Curry powder – 1 tbsp
Lettuce cups – 6 (to serve)
- Discard the bones, skin from chicken and make it in to small pieces. Roughly chop into small bits and put it in a large salad bowl.
- Now toss in mango cubes, grapes, onion, potato and celery.
- Now mix in mayonnaise, curry powder and stir well so that they coat evenly.
- Keep it refrigerated for at least an hour as it helps the flavour to develop better.
Serve in lettuce cups.
