This a weight watchers recipe that tastes great when served with cooked white rice. This low calorie stir fry recipe will leave you feeling fuller and energetic.
Boneless skinless chicken breasts – 1 ¼ lbs
Bean Sprouts – 2 cups
Vegetable oil – 2 ½ table spoon (divided)
Gingerroot pared and minced – 1 ½ tsp
Garlic cloves – 2 minced
Scallion – ¾ cup
Carrot – ¾ cup
Soy sauce – 3 – 4 tbsp (reduced)
Honey – 3 tbsp
- In a huge frying pan, heat 1 ½ tbsp of oil in high flame and then add the sprouts and stir well. Cook until it is soft and brown. Now transfer the sprouts to the plate and keep it warm.
- Now add the remaining oil and heat it for few seconds. Add chicken, garlic, ginger and carrots to hot oil and stir fry for a couple of minutes.
- Now toss in scallions and stir fry until the chicken is brown and tender for 3 minutes or more.
- Now pour soy sauce and honey. Stir well. Cook well for a minute or longer.
Top it with hot sprouts with chicken stir fry. Serve warm with rice.
