This is a sweet and pungent salad that would make the oranges look blood red as the beets that are used in the salad turns them. This is a perfect salad for family gatherings. Make sure that you use the wild arugula that is more pungent than the regular ones.
Fresh orange juice – 1 tbsp
Balsamic vinegar – 1 tsp
Sherry vinegar or red wine vinegar – 1 tbsp
Salt and pepper powder – to taste
Grape seed oil or sunflower oil – 3 tbsp
Extra virgin olive oil – 1 tbsp
Small beets – 2 large or 4 small beets (peeled and cut in rounds or half moon)
Baby or wild arugula – 4 cups
Chopped cilantro – 2 tbsp
Chopped walnuts – ¼ cup
- In a small bowl, add together the orange juice, balsamic vinegar, sherry or red wine vinegar, oil, salt and pepper.
- Taste and adjust the level of acidity and add a bit of vinegar and orange juice.
- Toss the beets with a tablespoon of dressing, toss the arugula in 3 tbsp to the rest of the dressing and arrange on a wider bowl.
- Then arrange the oranges and beets above the arugula in alternate fashion.
Drizzle the remaining dressing and add cilantro and walnuts.
